Accounts payable & receivable
Know what you owe, who owes you, and when the money moves. Fewer late fees on one side, faster payments on the other.
Cash problems usually start in the space between owing and being owed. Bills paid late because nobody tracked them, and invoices unpaid because nobody followed up. Both are fixable with process, and process is the whole job here.
On the payable side, Dave tracks what you owe and when, so due dates stop being surprises and late fees stop being a line item. On the receivable side, he tracks what clients owe you, flags what's aging, and gives you a follow-up rhythm, so getting paid stops depending on your memory.
Running a catering company taught him this the direct way. Anybody in catering knows the shape of it: you lay out for materials and labor before the event, and if the deposits and the receivable terms are not set right, one last-minute cancellation puts you underwater. Setting expectations, collecting the right deposits, and keeping terms that hold you in a positive cash position is the difference between a good season and a scary one.
There is a second reason to have someone matching bills against what actually arrived: scams keep getting more sophisticated. Owners caught up in the day-to-day rarely have time to check every invoice against every delivery, and that is exactly the gap a fake invoice walks through.
One boundary stays firm: Dave prepares and tracks, and you approve and pay. He will never have the ability to move your money or sign a check. Your bookkeeper should count the cash, not touch it.

Questions about accounts payable & receivable
Will Dave pay my bills for me?
He prepares them: tracked, verified, and queued with due dates. You approve and make the payment. Dave never holds signing authority or the ability to move money, by design.
Can Dave chase down my unpaid invoices?
He'll build and run the follow-up process: aging reports, reminder cadence, and clear records of who owes what. Whether reminders go out under your name or his depends on what fits your client relationships, and you'll decide that together.
Is AP/AR included in monthly bookkeeping?
Basic tracking often folds into monthly service. Heavier volume, like a business processing many bills and invoices a month, gets scoped as part of the proposal so pricing stays fair both ways.
